- 2 cold large eggs
- 2 Tbsp. soy sauce
- 2 Tbsp. mirin
- 6 Tbsp. water
Preparation
Step 1
In a resealable plastic bag, combine soy sauce, mirin, and water (start with 3 Tbsp water and taste before adding more water). Set aside.
Step 2
Bring water to a boil in a medium saucepan.
Step 3
Immediately reduce heat to maintain a simmer and cook the eggs for exactly 7 minutes .
Step 4.
After 7 minutes, take out the eggs and soak in the ice bath to stop them from cooking further. Let them cool for 3 minutes.
Step 5
Gently peel the eggs.
Step 6
Put the eggs in the sauce bag. Submerge the eggs in the marinade. Let them marinate overnight.
Step 7
Slice and enjoy these delicious ramen eggs.
